SAUTEED RADICCHIO

INGREDIENTS

  • 2 heads radicchio

  • 1 tablespoon olive oil

  • 1 tablespoon honey

  • 2 tablespoons balsamic vinegar

  • Salt and pepper

METHOD

  1. Wash, dry and core the radicchio

  2. Tear the radicchio into bite-size pieces

  3. Add to a hot pan with the olive oil

  4. Add the honey and balsamic vinegar

  5. Cook until tender

  6. Remove from heat and add salt, pepper, fresh lemon, fresh thyme and a small drizzle of olive oil

TIP

Turn this salad into a main by adding grilled steak, chicken, or grilled salmon.
